CINNAMON TOAST

INGREDIENTS: 1) 2 Slices Bread 2) 1/2 Teaspoon Cinnamon Powder 3) 1 Teaspoon Sugar 4) 2 Teaspoon Butter 5) 2 Tablespoon Yogurt 6) Few fresh grapes or any fruit of choice 7) 1/2 Cup dehydrated Cranberries optional 8) Chocolate coated Raisins/Almonds optional PREPARATION TIME: 15 Minutes HOW TO PREPARE: * Melt butter in a pan and coat the pan with it * Sprinkle Sugar and cinnamon powder on pan * Put the bread slice in pan * Let it cook till sugar is melted and sticks to bread slice * Move the slice in the pan to get the sugar and cinnamon on the edges * Turn the bread slice and toast the other side too * Make sure there is no sugar or cinnamom before adding another bread slice * Serve hot with fresh fruits, dehydrated fruits, and dry fruits * Add some chocolate bites and yogurt to the serving plate

FRESH MANGO CUCUMBER SALAD

INGREDIENTS: 1) 1 Mango 2) 1 Cucumber 3) 8-9 Cherry Tomatoes 4) 50 gms Paneer/cottage cheese 5) 1/4 Cup Dehydrated cranberries 6) Salt to taste 7) Black Pepper to taste 8) 1/2 Lemon Juice 9) 1 Green Chilli 10) Few Peanuts/Pine nuts 10) Fresh Mint Leaves to garnish PREPARATION TIME: 15 Minutes HOW TO PREPARE: * Wash and peel mango, cut 1" julienne and put them in a bowl * Peel and cut 1 " julienne of cucumber, add to mango bowl * Cut the tomatoes in slices and add it to mango bowl * Chop green chillies finely and add this to the bowl * Add dehydrated cranberries(or Raisins) and crushed paneer to the bowl * Sprinkle salt, black pepper and peanuts and mix well * Serve Chilled to guests with fresh mint leaves as garnish

BROCCOLI GARLIC RICE

INGREDIENTS: 1) 2 Cups Rice or leftover cooked rice 2) 1 Broccoli 3) 4-5 Garlic Cloves Chopped 4) 1-2 Onion 5) Salt to taste 6) Black pepper to taste 7) 1 Tablespoon Clarified Butter/Ghee 8) 2-3 Eggs PREPARATION TIME: 30 minutes HOW TO PREPARE: * Cook the rice in 5 times water and salt, when cooked drain water and keep aside * Wash and Chop the broccoli very finely and keep aside * Finely chop garlic cloves and onions too * In a wok heat up butter, add in the garlic and saute for few seconds * Add onions and saute till onions turn translucent * Add in chopped broccoli and mix well, let the broccoli cook for a few minutes * Add in Cooked rice or leftover rice and mix well till everything turns green * Sprinkle salt and black pepper according to ur taste * Prepare a sunny side up egg for each member * Serve the rice hot with sunny side up on the bed of broccoli rice

BRAZILIAN CHOCOLATE TRUFFLES

INGREDIENTS: 1) 1/4 Cup Butter 2) 1 Cup Condensed Milk 3) 50gms Milk Chocolate 4) 2 Teaspoon Cocoa Powder 5) Few Drops of Vanilla Essence 6) Pinch of salt PREPARATION TIME: 1 Hour 20 minutes HOW TO PREPARE: * In a bowl, heat butter and add condensed milk * Cook it on simmer flame, add pinch of salt * Break the chocolates into small pieces and add it to the pan * Add Vanilla essence and mix continuously * Add cocoa powder and mix well, cook till the mixture starts leaving sides * When mixture tries to come together, take off heat and let it chill for an hour * It forms dough like consistency, take small portions and make small balls out of it * Cover the balls in different sprinklers and condiments or crushed oreo biscuits * You can make a white truffle too with white chocolate and no cocoa powder * Serve at room temperature! Its a hit with kids!!

BAKED BABY POTATOES

INGREDIENTS: 1) 1 Kg Baby Potatoes 2) 1 Tablespoon Olive Oil 3) 3 Teaspoon Chopped Garlic 4) Mint Twigs 5) Rosemary Twigs 6) Salt to taste 7) Black Pepper to taste 8) Chaat Masala PREPARATION TIME: 30 minutes HOW TO PREPARE: * Wash the potatoes and keep them aside * If too large cut them into half * Prick each one with a fork and rub olive oil on them * Sprinkle salt, and pepper on the potato * Add chopped garlic and mix together everything * Put all potatoes on the baking tray * Add mint and rosemary twigs and put to bake * Bake for 30 - 35 minutes at 220 degrees * Look for golden brown color on sliced potatoes * Serve hot, sprinkle with some chaat masala!

SULTANA SCONES

Bake this lovely treat this new year and surprise you family and friends! Its very easy and simple to prepare, eggless, less sugar, less butter, kids love it! Ask your kids to help you out with it this winter vacations! They will surely love it. INGREDIENTS: 1) 225 gms Plain flour 2) 50 gms Butter Cold 3) 100 gms Sultanas/Raisins 4) 40 gms Castor Sugar 5) 150 ml Milk 6) 1 Egg beaten for egg wash/Milk PREPARATION TIME: 30 Minutes HOW TO PREPARE: * Line the baking sheet and pre heat the oven at 220 degrees * In a bowl mix flour and butter till breadcrumb consistency * To above mix add sugar and sultanas * In the middle pour milk and fold in the mix till no dry flour left * Knead a little to gather the dough together * Flatten with the hands till 2 cm thick disc * Cut 12 small rounds or 8 big rounds with cutter * Place them on baking sheet and brush the top of scones with egg wash or milk * Bake for 15-20 minutes till top is golden brown in color * Cool on wire rack and se

FRENCH BEANS CLEAR SOUP

INGREDIENTS: 1) 250 gms Beans Chopped 2) 2 Tomatoes Chopped 3) 1 Onion Chopped 4) 1 Teaspoon Olive oil 5) 2 Teaspoon Chopped Garlic 6) 1 Teaspoon grated Ginger 7) 1/2 Teaspoon Chilli Flakes 8) 1/2 Teaspoon Jeera Powder 9) Salt to taste 10) Black Pepper to taste 11) Few Mint Leaves 12) Coriander Leaves for garnish 13) Few Lemon drops (optional) PREPARATION TIME: 20 minutes HOW TO PREPARE: * In a pan boil the beans in 1 cup water with little salt * Drain the water in a bowl and keep aside the beans * In a Pan heat olive oil and add chopped garlic and sauté for 2 minutes * Add in chopped onions and sauté further for few minutes * Add 2 Glass drained beans water, tomatoes and beans and let it boil * Add Salt, black pepper, jeera powder and grated ginger * Add few mint leaves and chilli flakes once the tomatoes look cooked * Pour hot in soup bowls and add lemon drops if you want a little tangy flavor * Garnish with coriander leaves and serve!

NO BAKE LEMON CHEESE CAKE

INGREDIENTS: FOR CAKE BASE: 1) 1 Cup Malai/ Clotted Cream/ Devonshire cream 2) 1 1/2 Cup Cheeni/ Granulated Sugar 3) 4 Eggs 4) 2 Cup of Flour 5) 1/2 Cup of warm Milk 6) 1 1/2 Spoon of Baking Powder 7) 1 Pinch of Salt 8) 2 Tablespoon Lemon juice 9) 2 Tablespoon Sugar (for sugar syrup) 10) 1/2 Cup water(for sugar syrup) FOR CHEESE CAKE: 1) 500 gms Cream Cheese 2) 1 cup Castor sugar 3) 500 gms Double cream/Whipped Cream 4) 2 Tablespoon Lemon juice FOR GARNISH: 1) 1/4 Cup Lemon Rind 2) Lemon Peel for lemon flower PREPARATION TIME: 1 hour and 40 minutes HOW TO PREPARE: CAKE BASE: * Mix Malai, eggs, and sugar till light and fluffy and till sugar is dissolved * Add in flour, salt and baking powder and mix well to form a smooth batter * Finally add in milk and lemon juice mix well * Grease a baking tray and pour in the batter * Bake at 200 degrees in oven for around 20 minutes, Keep a watch in between * When done then take it out and let

PRAWN FRIED RICE

INGREDIENTS: 1) 1 Cup long grain rice 2) 1 Tablespoon Olive oil 3) 400ml Water 4) 2 Eggs 5) 1 Carrot finely diced 6) 1 Cup peas 7) 2 Spring Onions chopped 8) 500gms Prawns peeled and washed 9) 1 Teaspoon sesame oil 10) 2 Tablespoon soy sauce 11) 1 Bunch of Buk Choy, shredded 12) 1 Tablespoon Sweet Chilly Sauce 13) Salt to taste 14) Pepper to taste PREPARATION TIME: 30 Minutes HOW TO PREPARE: * Cook rice in a pan with water and a pinch of salt * Drain and let it cool. Cover and refrigerate for an hour * Heat 1 Tablespoon oil in a wok and add eggs, season them with salt and pepper * Remove the eggs from the pan when done * Boil the peas and keep aside * Heat oil in the same wok, cook carrots, peas and white part of spring onions * Sauté for 2 Minutes or until carrot are soft * Add Prawns and stir fry for 2 more minutes untill prawns turn pink * Add salt and pepper and mix well * Add rice and sesame oil and stir fry for 2 Minutes * Stir in soy and sweet chilly sauce

ROASTED POTATOES AND BREAD SIDES

INGREDIENTS:  1) 500gms Potatoes  2) 3-4 Garlic Cloves  3) Salt to taste  4) Black pepper to taste  5) 2 Tablespoons Olive Oil  6) 100gms Cherry Tomatoes for garnish  7) 100gms Spinach Leaves  8) 4 Slices of Bread PREPARATION TIME: 40 Minutes HOW TO PREPARE: * Chop the garlic cloves and keep in a bowl * Add olive oil and mix well * Dice the potatoes and cut the bread into 1" pieces * Pour olive oil mix on potatoes and bread separately * Sprinkle salt and pepper on potatoes and bread * Toast the bread in oven till it gets crisp and brown * Till then the potatoes get a good marinate time * Roast the potatoes in the oven at 220 for 20 minutes * When done sprinkle some dried mint for extra flavor (optional) * Take out the potatoes on the serving dish * Sprinkle some chopped spinach leaves, halves of cherry tomatoes * Garnish with toasted bread croutons and a lemon wedge

DOMINO'S GARLIC BREADSTICKS

One of my favorites is DOMINO'S garlic breadsticks. Recipe for this is easy and can be found on web as many people have tried it out. I didn't want to follow the suit but secretly wanted to give it a try at least once. As I didn't have oregano at home, I made a different version of the breadsticks with garlic and dried mint. It tasted awesome and fresh. So the recipe following is my version. To make the original breadsticks just replace dried mint and chilly flakes with oregano!! INGREDIENTS:  1) 1/2kg Flour/Maida  2) 1/2 Sachet Active dry yeast  3) 1 Tablespoon Sugar  4) 1 Cup Lukewarm water  5) 6 Garlic Cloves Chopped  6) 3 Tablespoon Olive oil  7) 1 Teaspoon Salt  8) 2 Teaspoon dried mint  9) 1 Teaspoon chilly Flakes 10) 1 Cup Corn kernels 11) 1 Cup grated Cheese 12) Black pepper to taste PREPARATION TIME: 1 hour (knead and bake) and 24 hours(rest and prove) HOW TO PREPARE: DOUGH: * In a bowl take yeast and add sugar. * Add lukewarm water and leave for 10minutes to activ

BEANS AND BREAD GREEN SALAD

INGREDIENTS: 1) 4 Cups Mixed salad leaves 2) 1/2 Cup baked beans without sauce 3) 1/2 Cup Grapes 4) 1/2 Cup crumbled paneer 5) Salt to taste 6) Pepper to taste 7) 1/2 Cups Bread Crumbs 8) Few roasted peanuts 9) 1 Teaspoon lemon juice PREPARATION TIME: 15 minutes HOW TO PREPARE: * Wash the salad leaves and keep aside to drain excess water * These leaves are baby spinach, chard, rocket, and tatsoi * Cut the grapes into halves and keep it in a bowl * Add peanuts, baked beans, bread crumbs to grapes * Add in leaves, crumbled pander, salt and pepper * Mix well and finally sprinkle lemon juice

HONEY CHILLI BABYCORNS

INGREDIENTS: 1) 250gms Babycorn 2) 4-5 Garlic Cloves Chopped 3) 2 Green Chillies 4) Salt to taste 5) Black pepper to taste 6) 1 Tablespoon Tomato Sauce 7) 2 Teaspoon Green Chilli Sauce 8) 1 Tablespoon Soya Sauce 9) 2 Tablespoon Honey 10) 1 Capsicum Juliennes 11) 1 Onion Juliennes 12) 2 Tablespoon oil 13) 1/2 Cup green onions chopped PREPARATION TIME: HOW TO PREPARE: * Split the babycorn in half length wise and boil them till 8 minutes * Drain the babycorn and keep aside * In a wok, heat oil, add garlic and green chillies, saute for a minute * Add Onion, capsicum and saute for 3 -4 minutes * Add Tomato Sauce, soya sauce, green chilli sauce * Add babycorn and saute for a minute * Add honey and green onions chopped * Serve hot with chips and toasted bread!

RED SAUCY DIP

INGREDIENTS: 1) 1 Onion Chopped 2) 1 Tomato Chopped 3) 1 Capsicum Chopped 4) Salt to taste 5) Black Pepper to taste 6) 2 Teaspoon Honey 7) 1 Tablespoon Mayonnaise 8) 3 Tablespoons Pizza/Pasta Sauce FOR PIZZA/PASTA SAUCE: 1) 2 Tablespoons Olive Oil 2) 5-6 Cloves Garlic Chopped 3) 2 Green Chilli paste 4) 4-5 Tomatoes Chopped and Pureed 5) Salt to taste 6) Black Pepper to taste 7) Oregano to taste 8) Few Basil leaves chopped PREPARATION TIME: 10 Minutes HOW TO PREPARE: * LETS PREPARE PASTA/PIZZA SAUCE FIRST * In a pan heat oil, add garlic, and green chilli paste, cook for few minutes * Add Tomato's puree and cook for few minutes * Add salt, pepper, oregano and basil leaves * Cook for a minute and take off from heat * When cooled, put it in a jar and use whenever required * NOW LETS PREPARE THE RED SAUCY DIP * In a bowl, take 3 tablespoon of pasta/pizza sauce * Add Mayonnaise, Honey and mix well * Add salt and pepper to taste and mix * Add Chopped Onions, Cap

UPSIDE DOWN ICECREAM CAKE

It is a very simple recipe. No need for any cooking or baking!! Just assemble freeze and serve!! INGREDIENTS: 1) 4 pieces of swiss roll 2) 500 gms Chocolate Icecream 3) Cling sheet PREPARATION TIME : 10 mins FREEZING TIME : 4 Hours HOW TO PREPARE: * Take swiss roll and cut it into 1 cm slices and keep aside * I got swiss roll from a local bakery, you can make it at home too * Take a deep bowl, and cover it with a cling film * Choose a bowl, of which you want the cake to shape of * Arrange the swiss roll slices on the bowl sides * Make sure the roll direction is in the same way for all * Fill the spaces between the slices with more bits of swiss roll * Fill the swiss roll bowl with chocolate icecream * Cover icecream with swiss roll slices as done in the picture above (optional) * Cover with cling film again and put it in freezer for 4 hours * After 4 hours, remove cling film and put the serving dish on top and turn upside down * Carefully remove the cling film around the

EGGITZZA ( EGG PIZZA)

INGREDIENTS: 1) 6 eggs 2) 2 Onions Chopped 3) 2 Tomato Chopped 4) 1 Capsicum Chopped 5) 1/2 Cup Mushrooms Chopped (Optional) 6) 2-3 Cloves 7) 1 Tablespoon Oil 8) 2 Green chilli Chopped 9) Salt to taste 10) Red chilly powder/Black pepper to taste PREPARATION TIME: 15 mins HOW TO PREPARE: * In a pan add oil and crackle cloves * Add Chopped onions, tomatoes, capsicum and mushrooms * Saute for few minutes, Add green chillies chopped * Add Salt, red chilly powder/black pepper * Spread the mix vegetables in the pan evenly * Break eggs in the pan, not to break the egg yolk * Cover the pan with lid, cook till the eggs are done * Cut into triangles, so that each triangle has an egg yolk * Serve like a pizza and have it hot!

BREAD AND BUTTER PUDDING

INGREDIENTS: 1) 8 - 10 Slices of White milk bread 2) 1 Cup White butter or Makkhan 3) 1/2 Ltr Milk 4) 4 Eggs 5) 1 Cup Sugar 6) 1/2 cup Mixed nuts(Cashew, Almonds, walnuts, Raisins) 7) 1/2 cup Sugar for caramel 8) 1/4 Chopped Cashew nuts for caramel 9) 1/2 Cup Water for caramel PREPARATION TIME: 30 mins HOW TO PREPARE: * Chop all nuts and keep aside * Boil milk in a pan and add sugar * When sugar melts remove from heat and let it cool * Butter all slices of bread on both sides with white butter * Cut all the slices in 4 pieces * Grease a baking tray and arrange the bread slices in layers * In between bread layers sprinkle chopped nuts * Beat eggs and slowly add and mix it well in the cooled milk * Add the milk mix to the arranged bread slices so that all slices are soaked * Bake it at 200 degrees for 15 mins till the top turns golden brown * Once done chill it in fridge * Garnish with Cashew caramel and serve chilled FOR CASHEW CARAMEL: * In a pan add sugar and w

INGREDIENTS: 1) 8 Bread Slices 2) 1 Onion Chopped 3) 8 Green Chillies 4) 1/2 Cup Green Coriander Chopped 5) 8 Slices of Processed Cheese 6) Juice of a lemon 7) Salt to taste PREPARATION TIME: 15 mins HOW TO PREPARE : * Mix the onions, green chillies, coriander with lemon juice and salt. * Toast the bread slices till golden brown in color * Apply the vegetable mixture evenly on one side of bread * Cover them with cheese slices * Toast the bread back till color of cheese changes to light golden brown * Cut off the edges of the bread and cut into two pieces and serve hot.

PANEER/ COTTAGE CHEESE SANDWICH

INGREDIENTS: 1) 4 Brown bread/ Whole wheat Bread 2) 1 cup Paneer/ Cottage Cheese crumbled 3) 1 Onion Chopped 4) 1 Capsicum Chopped 5) 1 Tomato Chopped 6) 1 Teaspoon Pasta Sauce 7) Salt to taste 8) Black pepper to taste 9) 1 - 2 Teaspoon Ghee / Clarified Butter PREPARATION TIME: 20 mins HOW TO PREPARE: * In a bowl mix paneer, onion, capsicum and tomato * Add in pasta sauce, salt and pepper and mix well * Brush the bread with ghee on both sides, keep aside * Take on slice of bread and spread the paneer mixture on it * Put another slice of bread on top * Grill it in a griller or toast it in a toaster/Sandwich maker * Once done serve hot with tomato ketchup or green coriander chutney

CHICKEN CLEAR SOUP with SOYA SAUCE

INGREDIENTS: 1) 4 Cups of Water 2) 1 Cup Chicken Breast Diced 3) 1/2 Teaspoon Jeera Powder 4) 1 Onion diced 5) 1" pcs Ginger thinly sliced 6) 1/4 Teaspoon Black Pepper Powder 7) Salt to Taste 8) 1 Tablespoon Butter/Ghee 9) 1 Teaspoon Soya Sauce 10) 1/4 Teaspoon Fish Sauce 11) 1/4 Teaspoon Chilli Sauce 12) Chopped Green Onions for garnish PREPARATION TIME: 20 Mins HOW TO PREPARE: * Boil the diced chicken pieces in water till chicken gets cooked * Add Onions and ginger to the water * Add Black Pepper, salt, Jeera powder and Butter * Add Chilli, Fish and soya sauce * Let it simmer for 5 - 8 mins * Serve hot Clear chicken soup * Garnish with green chopped onion CAN HAVE IT ANYTIME! VERY LIGHT AND HEALTHY!
