Overnight Oats, Savoury
So here's presenting the savoury version of overnight oats, with fresh cucumber, carrot, ginger, Cilantro and pomegranate seeds.
The Tadka adds to the savouriness of the dish. The Asafoetida, paprika and curry leaves add a whole lot of flavour. I know your mouth might be salivating, listening to all that deliciousness... So here is the recipe...
INGREDIENTS:
- 1/2 Cup Oats
- 2 Teaspoon Chia Seeds
- 1 Cup Yogurt
- 1/2 Cup Cucumber
- 1/4 Cup Pomegranate Seeds
- Few Curry Leaves
- 1 Teaspoon Mustard Seeds
- 1 Green Chilly
- 1 Carrot
- 1" Ginger
- 1/4 Cup Cilantro Leaves
- 1 Dry Red Chilly
- Salt to Taste
- Black Pepper to Taste
- 1/4 Teaspoon Paprika
- Pinch of Hing/ Asafoetida
- 2 Teaspoon Oil
- 1/2 Cup Water/Milk (Optional)
- Handful of Roasted Peanuts
PREPARATION TIME: 20 Minutes
METHOD:
- Soak Chia seeds in little water for it to bloom
- Dice and cut the cucumber, Cilantro and Green Chilly
- Grate the carrots and ginger piece
- In a Jar or Bowl, Add in bloomed Chia seeds
- Throw in Oats and then pour yogurt to cover oats.
- Add in Cucumber, Carrots, cilantro, Green Chilly and Ginger
- Sprinkle salt and Black pepper
- Add little water or milk to adjust consistency to your liking
- Mix everything and place the Jar/Bowl in the Refrigerator
- Next Morning Its time for some Tadka!
- Heat Oil, Add in Dry Chilly, Curry leaves, Mustard Seeds, Hing and Paprika
- Saute until Mustard seeds crackle then pour this tadka on the overnight Oats
- Garnish with Fresh Pomogranate Seeds and Roasted Peanuts.
- Something healthy to try which is not Sweet!
