Paneer bhurji is a irressistable and flavourful recipe from the North India. Paneer bhurji is a quick, easy and staple food from Punjabi Cuisine. It is made by crumbling the paneer and saute it with onions and tomatoes. Paneer bhurji best tastes with Roti, Parathas or even Toasted Bread. INGREDIENTS: 200 gms Paneer 1 Onion 1 Tomato 1/4 Cup Peas 1 Green Chilly 1/2 Teaspoon Jeera Seeds 1/2 Teaspoon Red Chilly Powder Salt to taste 1 Tablespoon Oil 1/2 Cup Fresh Coriander PREPARATION TIME: 10 Minutes HOW TO PREPARE: Chop Onion, Tomato and Green Chilly In a pan heat oil and crackle jeera seeds Add Onions and Saute till Translucent Sprinkle Red Chilli powder and Chopped Green Chilly Add Tomato, Peas, Salt and Saute till it gets dry and peas get soft Add Crumbled Paneer and mix well Garnish with Fresh Chopped Coriander and serve hot with parathas and bread

Summer salad with grilled Paneer

Salads generally are very light on stomach and refreshing for the soul. Its a ready to eat food made up of small pieces of fruits or vegetables(which can be eaten raw). Its normally served at room temperature or chilled. Salads come in so many varieties and if accompanied with a little protein or healthy fats or even nuts can become a meal in itself.  INGREDIENTS:  1 Cucumber  2 Tomatoes  1 Capsicum  100 gms Paneer(Indian Cottage Cheese)  15-20 slices of Green Olives  Few Jalapenos  1 Lemon (Juice)  Few Roasted Peanuts(Optional)  Salt to Taste  Black Pepper to Taste  1/4 Cup Fresh Mint & Coriander Leaves  1 Teaspoon oil  PREPARATION TIME: 15 Minutes  HOW TO PREPARE:  Peel and wash the cucumber and dice it, keep it in a bowl  Dice Tomatoes and Capsicum and Add it to bowl  Heat a non stick pan, apply oil and pan grill the paneer  Once its golden brown, Dice it and add it to bowl too  Add Jalapenos and olives and give salad a good mix  Sprinkle Salt, Pepper, and chopped Mint and Coria

DILL WALA PANEER

INGREDIENTS: 1) 250 gms Paneer/Cottage Cheese 2) 1 Cup Dill Leaves 3) 2 Onions 4) 1 Capsicum 5) 1 Tomato 6) 2-3 Laung 7) 1/2 Teaspoon Jeera seeds 8) 1/2 Teaspoon ginger garlic paste 9) 1/2 Teaspoon Red Chilly powder 10) 1/2 Sabji Masala 11) 1/2 Teaspoon Tandoori Masala 12) Salt to taste 13) 2 Tablespoon oil 14) Fresh Coriander to garnish PREPARATION TIME: 15 Minutes HOW TO PREPARE: * Cut Paneer and Chop tomato finely, keep it aside * Cut Onions and capsicum in Rings or round slices * In a wok, heat oil, Crackle jeera seeds and laung * Add ginger garlic paste and chopped tomato, saute for a minute * Add onion rings, after a minute add capsicum rings and saute well * Add red chilly powder, salt, sabji masala and tandoori masala * Saute for few minutes, Add paneer and mix well * Cover and cook for few minutes * Add chopped dill leaves and fresh coriander, and mix well * Serve hot with naan, parathas or chapatis!

METHI PANEER DRY

INGREDIENTS: 1) 250 gms Paneer 2) 2 bunch Fenugreek/Methi leaves 3) 1 Onion 4) 2 Tomatoes 5) 1 Teaspoon Ginger Garlic paste 6) 1 Teaspoon Jeera Seeds 7) 1/2 Teaspoon Coriander powder 8) 1/2 Teaspoon Red Chilly powder 9) 1/2 Teaspoon Haldi/Turmeric powder 10) 1/2 Teaspoon Jeera Powder 11) 1/2 Lemon Juice 12) Salt to taste 13) 2 Tablespoon oil PREPARATION TIME: 15 minutes HOW TO PREPARE: * In a wok, Heat oil and crackle jeera seeds * Add Chopped Onions, saute till color changes * Add Ginger garlic paste and saute for 3 minutes * Add turmeric and chopped tomatoes, cook till the water gets reduced * Put in chopped fresh methi leaves and stir well * Add salt and jeera powder, coriander powder and red chilly, stir well * Cook till methi looks done, add in paneer cubes and cook till paneer gets soft * Before serving just pour half a lemon juice * Serve hot with parathas, nan or chapatis

On occassion of Dhanteras and Diwali i present instant gulab jamoon which requires hardly 30 minutes of your time!! INGREDIENTS: 1) 1 cup Mawa/Khoya 2) 1/2 Cup Paneer 3) 2 Tablespoon Maida 4) 1 Teaspoon Baking powder 5) 3 Cup Sugar 6) 1/2 Teaspoon Elaichi/Cardomom powder 7) Oil for frying PREPARATION TIME: 30 Minutes HOW TO PREPARE: * In a wok add oil and let it heat up for frying * In a bowl mix khoya, maida, paneer and baking powder * Mix well so that no lumps there and forms like a dough * Make balls and fry them in the wok till brown * In a pan add sugar and 1 cup water, let it boil * Add cardamom powder and boil till 1 string consistency * Put all fried balls into the sugar syrup and give them a boil each * Take out all gulab jamoons from sugar syrup and serve in a dish * For cupcakes, i made a 2 string sugar syrup * For Cupcakes, i strained the jamoons from extra sugar syrup * Done!
